Our company was founded by Desiderio Morales in the early 20th century as an individually owned business. The cheese was manufactured close to the dairy farms where the milk was produced since, at that time, there were logistical problems with respect to the transportation of milk. |

Today we continue to produce our cheese using the same artisanal methods as when the company was founded. Certain manual manufacturing processes have been mechanized however, such as the molding and pressing of the cheeses and the process of milk hygienization. |

| The majority of our products are made from unpasteurized milk. This gives the cheeses their distinctive characteristics, since the pasture grasses and herbs on which the sheep that produce the milk are fed are not altered in any way, because the milk is not subjected to heat treatment before coagulation. | ||||||||||
